Why does Apple use its own audio format instead of MP3?
Because Apple helped build MP3's actual successor. AAC (Advanced Audio Coding) — the codec M4A files carry — was developed starting in the early-to-mid 1990s by a consortium that included Fraunhofer IIS (MP3's own creator), Dolby Laboratories, AT&T Bell Labs and Sony, and was formally standardized as part of MPEG-2 in April 1997, specifically designed to beat MP3's sound quality at an equivalent bitrate. Apple adopted AAC as the default format for iTunes and the iTunes Store from the very beginning, wrapping it in its own M4A container — which is why virtually everything Apple's ecosystem produces natively, from music purchases to a quick Voice Memos recording, defaults to M4A rather than MP3.
